Food is a basic necessity. It nourishes the body and mind. Eating the right food is the first step towards achieving a healthy life. Food is considered as the fuel for maintaining the Agni (Digestive and Metabolic Fire), invigorating the mind and promoting the proper distribution of body elements. Food articles carry Prana or subtle energy hence nourish the body. Ayurveda cooking (Healthy Cooking) is a rational way of preparing food based on the principles of Ayurveda taking into consideration the dietary need of an individual based on Prakriti (Constitution), Vikriti (Imbalance / Disease), Season, etc. Food is the foremost important factor for maintaining the health, well-being and vitality of the individual. Applying Ayurveda principles in healthy cooking will help to improve health and disease-free state of the body. Ayurveda emphasises on consumption of all six tastes in a meal to balance the Doshas and nourish the Dhatus (Body tissues). Cooking procedure or process always introduces new characteristics to the food. It will be very easy to understand various concept of food and nutrition in Ayurveda after understanding this simple principle. Ayurveda cooking processes result in change of various properties of food articles or reduce the harmful effects. The aim of this course is to help you prepare delicious Ayurvedic food using the right ingredients and understand the proper way of cooking using spices in appropriate quantity according to one’s Prakriti.
